Achaari Kaachari Mirchi – Instant Pickle!

Another rustic instant achaar from the rurals of Rajasthan – Kaachri Mirchi ka Aachaar. It is tasty, tangy, spicy yet delicious pickle that can be had with roti/poori/phulka/naan/sogra/makki di roti !

Note: tspn stands for teaspoon in ingredients.

Ingredients

  • Kaachri - 250 gms
  • Green/Red chilies - 2 big each
  • Red chili powder - 1/2 tspn
  • Salt as per taste
  • Turmeric powder - 1/2 tspn
  • Rai /mustard powder - 1/2 tspn
  • Jeera/Cumin - 1/2 tspn
  • Rai/mustard seeds - 1/2 tspn
  • Kalaunji - 1/2 tspn
  • Heeng powder - 1 pinch
  • Oil - 1 small tablespoon

Instructions

  1. Peel and deseed the Kaachris.Check both seeds and flesh if it is not sour. Discard if sour. Cut into thin long juveniles.
  2. Wash and pat dry the chillies. Cut into long juveniles same size as kaachri.
  3. Mix both in a bowl. Add salt, little red chilli powder (for color), raai powder and haldi powder. Mix all.
  4. Heat oil. When hot, give tadka of jeera, raai, kalauni and heeng powder. Add to the kaachri and mirchi mixed with masala.
  5. Mix well and keep for about half to one hour time. Your Achaari Kaachari Mirchi is ready.
