Amritsari Stuffed Tawa Kulcha is a very famous stuffed Indian flatbread.

Amritsari Stuffed Tawa Kulcha is a delicious flatbread. This uses a spicy potato mixture stuffed in the dough to make this tasty dish. To make this kulcha healthy, the mixture of whole wheat flour and refined flour used. Generally, it is cooked in a tandoor or clay oven. But, here is a simple and easy way to make this yummilicious kulcha at home. This kulcha prepared on a tawa. It is a mouthwatering dish goes well with Punjabi Chhole, onion and green chilli. This is a very simple recipe yet delicious. So, try this recipe at home and enjoy with your family and friends.

  • Use only iron tawa to make this kulcha. If you use non-stick tawa then the kulcha will not stick on iit
  • By applying water on one side of the kulcha helps in sticking.

Ingredients

  • FOR THE DOUGH:-
  • Whole Wheat Flour - 1 Cup
  • Maida/Refined flour - 1/2 Cup + dusting
  • Fresh Curd - 3 Tablespoon
  • Oil - 1 Tablespoon
  • Salt - as per taste
  • Sugar - 1 Teaspoon
  • Baking powder - 1/4 Teaspoon
  • Baking soda - a pinch
  • FOR STUFFING:-
  • Boiled Potato - 2
  • Green chilli - 2 finely chopped
  • Green Coriander leaves - 2 Tablespoon chopped
  • Grated ginger - 1/2 Teaspoon
  • Chaat masala - 1/2 Teaspoon
  • Amchur powder/Dry Mango powder - 1/2 Teaspoon or as per taste
  • Salt - as per taste
  • OTHER INGREDIENTS:-
  • Ghee/Clarified butter or Butter - as required
  • Chopped coriander leaves - as required
  • Black Sesame seeds or Kalonji/Onion seeds - as required

Instructions

  1. PREPARING THE DOUGH:- Take a bowl and add wheat flour, maida, salt, sugar, oil, curd, baking powder, baking soda. Mix all together and make a soft dough by adding water. Cover the with a cloth and rest it for 2 to 2 & 1/2 Hours.
  2. PREPARING THE STUFFING:- Mash the boiled potato in a bowl. Add chopped green chilli, coriander leaves, grated ginger, salt, chaat masala and amchur powder. Mix well together.
  3. PREPARING THE AMRITSARI KULCHA:- Heat a tawa on high flame. (Normal roti tawa, do not use a non-stick pan)
  4. Take a big porting of the dough. Dust it with a flour and roll it using rolling pin. Make a small roti.
  5. Put the stuffing in the centre. Cover and seal it properly. Invert it.
  6. Sprinkle some black sesame seeds and coriander leaves on top.
  7. Then roll it thick using rolling pin. The sesame side should be facing down.
  8. Brush the water on top of kulcha.
  9. When the tawa is hot, place the kulcha on it. The water-side should be facing down. (it gives the tandoori texture to the kulcha)
  10. Cook it on low flame for 2 to 3 minutes. It will puff.
  11. Then invert the tawa, cook the kulcha on direct flame. Cook it on high flame.
  12. Once it is cooked properly, take it out on a plate.
  13. Brush some butter or ghee on top.
  14. Yummy 'Amritsari Stuffed Tawa Kulcha' is ready to be served with Punjabi Chhole, onion rings and green chilli.
