Tips and Suggestions by Mom Chef:
- The besan should be fine & sieved.
- Add salt carefully.
- Add asafoetida more if it is light and add less if it is strong.
- Little dry dough mixture should be kept aside to adjust the consistency of the dough.
- Add water carefully and gradually to knead the dough.
- The pounding process is necessary to make soft and crispy papdi.
- Maida should be used for dusting while rolling the papdi.
- The papdi should be fried in medium hot oil.
