Chana Kadhi – Jaisalmer Style is a famous and delicious dish from Rajasthan.

Chana Kadhi – Jaisalmer Style is mouthwatering kadhi. This uses black chickpeas/Kale chane, gram flour/besan, curd, some spices. This curry is healthy, rich in protein. This is a famous kadhi of Jaisalmer, Rajasthan. It is very easy to prepare and made with the easily available ingredients. It can be served with chapati or rice. So, try this different type of kadhi recipe and enjoy with your family. Also, don’t forget to share your feedback.

Ingredients

  • Kale chane/Black chickpeas - 1 Cup soaked and boiled
  • Fresh Curd - 1 Cup
  • Besan/Gram Flour - 3 Tablespoon
  • Green chilli - 1 finely chopped
  • Ginger - 1 inch piece finely chopped
  • Cumin seeds/Jeera - 1/2 Teaspoon
  • Turmeric powder/Haldi - 1/2 Teaspoon
  • Salt - as per taste
  • Heeng/Asafoetida - a pinch
  • Bay Leaf - 1
  • Cinnamon - 1 small stick
  • Green Cardamom - 2
  • Cloves/Laung - 4
  • Coriander leaves - a handful chopped
  • Mustard Oil - 1 Tablespoon
  • FOR TADKA:-
  • Ghee/Clarified butter - 1 Teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Red chilli powder - 1/2 Teaspoon
  • Dry red chilli - 2

Instructions

  1. Soak the chane overnight. Then cook it in a pressure cooker for 2 whistles. Add a little salt to it while cooking.
  2. Take a bowl, add curd, gram flour, salt, turmeric powder. Mix well. This should be lumps free.
  3. Meanwhile, heat mustard oil in a kadai.
  4. Add asafoetida, cumin seeds. Saute it. Then add bay leaf, cinnamon, cardamom, cloves.
  5. Then add finely chopped ginger and green chilli. Saute it.
  6. Now, add the curd-besan mix to it. Mix well. Cook it on a medium flame while stirring continuously. Add little water to adjust the consistency. Bring it to one boil.
  7. Crush half of the quantity of boiled chane with a fork.
  8. Add both crushed chane and whole chane to the kadai. Mix well and cook for 5 to 7 minutes on a medium flame.
  9. PREPARING TADKA:- Take a tadka pan, add ghee and heat it. Add mustard seeds and let it splutter. Then switch off the gas. Add whole red chilli. Add red chilli powder.
  10. Pour the tadka over the kadhi. Garnish it with coriander leaves.
  11. Yummy 'Chana Kadhi - Jaisalmer Style' is ready to be served.
