Ingredients

  • All purpose flour/ Maida - 1 and 1/2 cup
  • Flax seed powder - 1 Tablespoon soaked in 3 tablespoon lukewarm water
  • Yoghurt/ Dahi - 3/4 Cup
  • Nutmeg powder - 1/4 Teaspoon
  • Zucchini - 1 medium sized peeled and grated
  • Vanilla essence - 1/2 Teaspoon
  • Cocoa powder - 1/4 Cup
  • Baking soda - 1/2 Teaspoon
  • Powdered Sugar - 1 Cup
  • Butter - 1 Tablespoon (at room temperature)
  • Chocolate chips - 1/2 Cup
  • Water - 1/4 Cup if required
  • Butter - 1/4 Tablespoon

Instructions

  1. Preheat oven at 180 degrees Celcius. Grease the baking tray/pan and dust with flour.
  2. In a bowl, add maida, cocoa powder, baking soda and baking powder. Sieve it together.
  3. In another bowl combine sugar, flax seeds mixture, vanilla essence. Whisk it.
  4. Add wet ingredients to dry ones. Mix it well then add dahi. Mix again. Add zucchini and chocolate chips, saving 1 tablespoon for garnishing. Mix it.
  5. Add water if required. The batter should be of falling consistency.
  6. Pour the batter into the baking tray. Bake for 50 -60 minutes or until a toothpick comes out clean.
  7. Cool the cake completely when cooked.
  8. Melt 1/4 tablespoon butter and add 1 tablespoon chocolate chips. Drizzle this over the cake.
  9. Delicious 'Chocolate Zucchini Cake' is ready to be served.
