Coconut Rice is a famous breakfast/lunch from South India.

Coconut rice is made with cooked rice, coconut and few spices. Kids love this and makes a great dish for lunch boxes. It is quick and easy to prepare.

Ingredients

  • Cooked rice- 2 Cups
  • Ghee/Clarified butter - 2 Tablespoons
  • Rai/Mustard seeds - 1 Teaspoon
  • Urad dal/Black gram - 1 Teaspoon
  • Chana dal/Bengal gram - 1 Teaspoon
  • Hing/Asafoetida - a pinch
  • Desiccated coconut - 2 Tablespoons heaped
  • Finely chopped Green chilli - 1
  • Whole red chilli - 1
  • Salt as per taste
  • Curry leaves as required
  • Groundnuts/peanuts - 1 Tablespoon
  • Coriander leaves for garnishing

Instructions

  1. Heat ghee in a pan.
  2. Add mustard seeds, bengal gram, urad dal, hing and red chilly.
  3. Cook till dals/lentils turn golden brown.
  4. Add green chilly, groundnuts and curry leaves.
  5. Add dessicated coconut and salt.
  6. Add cooked rice and mix well. Switch off the flame.
  7. Your tasty coconut rice is ready to be served. Garnish it with coriander leaves and serve.
