Cream of tomato soup is a classic recipe that’s available in most Indian restaurants. 

Cream of tomato soup is a rich, creamy tomato soup, which soothes the Indian palate. The recipe uses boiled tomatoes, blended with various spices and cream. Much loved by kids and adults alike, this cream of tomato is a must try recipe for all.

Ingredients

  • Tomatoes - 3 big (chopped)
  • Ginger - an inch
  • Pepper powder - as per taste
  • Salt - as per taste
  • Cream - 3 to 4 tablespoons
  • Maida - 1 tablespoon
  • Butter - 2 tablespoon
  • Sugar - a pinch
  • Garlic - 4 cloves
  • Water - as needed

Instructions

  1. Boil the tomatoes in sufficient water along with ginger and garlic. Let them cool.
  2. Blend the veggies in a mixer. Add all the water and keep aside.
  3. Heat the butter in a pan. Add maida and cook till it gets cooked. Add the tomato puree. Mix properly.
  4. Add salt, sugar, pepper powder and cook until a boil comes. Add the cream and blend in.
  5. Simmer for a few mins. Adjust consistency and seasoning.
  6. Garnish with cream and serve the cream of tomato soup with croutons.
