Gobhi Mussalam – Gobhi in Onion Tomato Gravy

Ingredients

Gobhi/Cauliflower - 500 grams (prefer small sized one)
Green/Red Chilies - 2 chopped
Tomatoes - 3 chopped
Onions - 2 chopped
Red chili powder - 1 1/2 teaspoon
Coriander/Dhaniya powder - 1 teaspoon
Turmeric/Haldi powder- 1/2 teaspoon
Garam masala - 1/2 teaspoon
Fresh coriander chopped - A handful for garnishing
Grated ginger/adrak - 1 teaspoon
Heeng/Asafoetida - 1 pinch
Jeera/Cumin seeds - 1 teaspoon
Bay leaf/Tejpatta - 3 leaves
Black pepper/Kali Mirch - 5
Cinnamon/Daal Chini - 2 small sticks
Ghee/Oil - 1 tablespoon
Salt as per taste

Instructions

Cut the stalk and leaves of Gobhi and keep the florets as big as possible. If very big, then cut into 4 florets. Blanch them with a pinch of salt.
Grind chopped tomatoes, onions, chilies and ginger in a blender.
Heat ghee/oil in a pan. Add tadka of asafoetida and cumin seeds. Add bay leaf, black pepper and cinnamon (saboot garam masala) to the tadka and saute them.
Add the blanched gobhi florets and saute them. Add little salt and cook it covered for 5 minutes on low flame.
Add the grinded tomato onion chilies puree to it and stir.
Add red chili powder, turmeric, coriander powder and pinch of garam masala and stir them well. If you want the gravy to be richer, you can add cashew and poppy seeds paste to it.
When the gravy and gobhi are cooked properly leaving oil from sides, it indicates that they are ready. If not then cook for 5 more minutes so that the water is evaporated and masala is infused well into the gobhi.
Garnish with fresh coriander leaves or greens of spring onion..Enjoy tasty Gobhi Mussalam - Gobhi in Onion Tomato Gravy
