Gujiya In Air Fryer is a famous sweet dish all over India. In different states it is known by different names, like in Maharashtra it is popular by the name of karanji. The filling mixture also varies. They are famous as khoa gujiya. For this recipe, you will require simple ingredients like clarified butter, desiccated coconut, dry fruits and sugar. Some fillings also require sooji. It requires more oil for deep frying. But, with the air fryer it becomes a no-oil frying dish. This way you can enjoy your holi with this guilt-free snacking. Tips and suggestions by the Mom Chef:-

  • You can take the dough mixture ratio of half cup wheat flour & half cup all purpose flour for making the gujiya.

Ingredients

  • FOR FILLING (following ingredients are required)
  • Ghee/Clarified butter - 1 tablespoon
  • Almond and Pistachio - 1/4 cup (finely chopped)
  • Crushed sugar - 1/4 cup
  • Dessicated coconut - 1/2 cup
  • FOR DOUGH (following ingredients are required)
  • Maida/All Purpose Flour - 1 cup (250 gms)
  • Salt - to taste
  • Ghee/Clarified butter - 2 tablespoon or as required
  • Water - as required
  • Oil - for greasing

Instructions

  1. In a pan, heat 1 tablespoon ghee, put the almond-pistachio mix dry fruit. Saute well on medium flame. Roast till it gives a nice aroma.
  2. Then, put the dessicated coconut and saute on low flame for 2 to 3 minutes. Allow it to cool down. After the filling mixture completely cools down , add the crushed sugar.
  3. In a bowl, take all purpose flour, salt to taste, ghee and add water in small quantity, and bind the dough with light hands. Add water as required so that the dough binds well. Cover it with a damp muslin cloth and rest it for 30 miutes.
  4. Set the air fryer on 180 degrees temperature for 5 minutes for preheating the air fryer. After 30 minutes knead the dough lightly. Take a small portion of the dough, with rolling pin make a small roti.
  5. Place the small roti in the gujiya maker. Fill one side with 1 to 2 teaspoon of the filling, apply water on other side of the small roti and close the maker. The gujiya is ready. With the same process make more gujiya.
  6. For making with hands, place the small roti in between the fingers, place the filling mixture, apply water on the other side of the small roti. Seal it properly and close with the dough giving it a proper design.
  7. Grease the grill of the air fryer with oil and grease the gujiya with oil. Place the gujiya in the air fryer, set the temperature at 180 degrees for 10 minutes. After 5 minutes apply more oil on the gujiya and air fry it.
  8. The Gujiya In Air Fryer is ready to serve.
