Homemade Veggie Pizza

Ingredients

Pizza bread base - 2 medium/large
FOR TOMATO SAUCE
Medium tomatoes - 5 (finely chopped)
Garlic cloves - 3 (finely chopped)
Olive oil - 2 tablespoon (or other veg oil)
Dried basil/Fresh Basil - 2 tablespoon
Dried oregano - 1 teaspoon
Freshly ground black pepper - as per taste
Salt to taste
TOPPINGS FOR 2 PIZZAS
Onion - 1 (sliced)
Capsicum - 1 (sliced)
Tomato - 1 (sliced or chopped)
Pitted green/black olives - 9 (sliced,optional)
Grated mozzarella cheese - as per taste
Oregano - as per taste
Chilli Flakes - as per taste
Dry/Fresh Basil - as per taste (optional)

Instructions

STEPS TO MAKE PIZZA SAUCE
Blanch the tomatoes and then chop them or make puree.
Heat oil in a pan and fry the chopped/grated garlic. Add the tomatoes.
Cook them uncovered for 5 minutes and add the herbs, salt and pepper.
Mix it well and cook for 4 minutes.
STEPS TO ASSEMBLE VEG PIZZA
Take pizza base and place it on a baking tray.
Brush some olive oil (or any other veg oil) on the pizza base.
Spread the tomato sauce made earlier on the pizza base.
Top it up with the veggies and spread herbs. Alternatively you may marinate the veggies with herbs for 15 minutes. Spread the grated cheese.
Bake the veg pizza in a preheated oven for 20 minutes at 180-200 deg C. The cheese spread should melt.
Serve Pizza hot with additional tomato sauce, oregano, chilli flakes as per taste.
