Shahi Zaffrani Pulao is Indian traditional meetha pulao that is made on special occasions and festivals.

Ingredients

  • Rice 250 gms
  • Cashew chopped into half nuts 5-6 pieces
  • Almond peeled and chopped into half 5-6 pieces
  • Raisins chopped into half 5-6 pieces
  • Coconut cut into small pieces
  • Sugar 1 cup
  • saffron few strands
  • Saunf 1/2 tablespoon
  • Cinnamon powder 1/2 tablespoon
  • Cardamom powder 1/2 tablespoon
  • Ghee 4-5 tablespoons
  • Green Cardamon 3-4 pieces
  • cinnamon stick 1

Instructions

  1. First, wash and soak rice in water for about 25-30 minutes.
  2. Now, take kadai and add 3-4 tablespoons of ghee.
  3. When ghee heats up a little then add sauf, green cardamon and cinnamon stick and stir it properly.
  4. Now, add chopped almonds, cashewnuts, raisins, and coconut pieces and stir it properly for another 3-4 minutes.
  5. Then add cinnamon powder, cardamon powder and add saffron and then soaked rice and again stir it.
  6. Add about 1 cup of water and bring to a boil and simmer.
  7. Let it cook for about 10-15 minutes and once its about 1/2 done, then done add sugar and again stir it well.
  8. Serve Shahi Zaffrani Pulao with love and enjoy with love.
