Baigan (brinjal) Eggplant is a bit disliked veggie by the kids often. But when you make this yummy Bharta from it, they all fall in love with it. My son never eats Baigan in other forms, but make bharta and he eats 1 roti more than his normal diet. So I present the tasted Brinjal ka bharta which has so nice smoky aroma than the other ways of making.

Ingredients

  • Baigan/brinjal: 2 big bharte wale
  • Boiled potatoes: 2 peeled and mashed
  • Tomato: 1 big finely chopped
  • Green chili: 1 finely chopped
  • Ginger: paste or grated
  • Oil: 1 tablespoon or less
  • Salt: as per taste
  • Red chili powder: 1 teaspoon
  • Coriander Powder: 1 teaspoon
  • Turmeric: 1/2 teaspoon
  • Garam masala: 1/2 teaspoon or less
  • Dry Mango Powder: 1/2 teaspoon or lemon juice
  • Cumin Seeds, Asafoetida

Instructions

  1. Wash and slit baigan to check for worms.
  2. Now either pressure cook or roast them after applying oil.
  3. Today I have roasted the brinjal. Roast from all sides. When cool, remove the skin and mash it.
  4. Keep some charred skin of the brinjal to have the charcoaly smokey flavour.
  5. Heat oil in a wok/kadhai. Give tadka of asafoetida and cumin seeds.
  6. Add finely chopped chilies and ginger and saute. Then add chopped tomato. Stir and cook for 2 mins or so.
  7. Next add salt, turmeric, red chili, coriander powder. Mix well. Add mashed potato and mashed brinjals. Mix well and cook for 3-4 mins.
  8. Add garam masala powder and amchoor. (Or else lemon juice).
  9. Cook on low flame till you get nice aroma of all masalas. Switch off the flame and garnish your ready bharta with fresh coriander.
  10. Note - This recipe is not using any onion/garlic. If you want, add these just before adding tomatoes.
