Jwar Roti And Lehsun Chutney | Village Thali is a meal consist of red chilli-garlic chutney, jwar roti or sorghum Indian flatbread. This tasty and spicy treat is a must try dish. Ingredients

  • For Chutney:-
  • Garlic - 15 to 20 cloves
  • Dried red chilli - 10 soaked in water
  • Salt - as per taste
  • Coriander powder - 1 Tablespoon
  • Turmeric powder - 1/2 Teaspoon
  • Amchur/dry mango powder - 1 Tablespoon
  • Water - as required to grind the chutney
  • Ghee/Clarified Butter - 1 Tablespoon
  • Onion - 1 chopped
  • Rai/mustard seeds - 1/2 Teaspoon
  • Heeng/ Asafoetida - a pinch
  • Red chilli powder - 1 Teaspoon
  • For Roti:-
  • Jwar aata/ Sorghum flour - 1 Cup + for dusting
  • Salt - as per taste
  • Water - as required
  • Ghee/clarified butter - as required for roasting

Instructions

  1. Take a grinder jar and add garlic, red chillies, salt, turmeric powder, amchur powder. Grind it to smooth paste by adding water.
  2. Now, take a pan. Add ghee and heat it.
  3. Add rai and heeng ka tadka.
  4. Add chopped onions and saute for 2 minutes.
  5. When onion gets translucent then add the ground paste. Add some water to it. Mix well.
  6. Saute it for 5 to 10 minutes or until the ghee leaves from sides. Cook it on a low flame while stirring in between. Then switch off the gas.
  7. For Roti:-Now take a bowl and add jwar aata and salt. Knead a dough using water. The dough should be medium-tight dough.
  8. Now, heat a tawa. (It was cooked in on mitti ka tawa)
  9. Take a big sized portion of the dough. Pat, it in between your palms. Flatten it with your palms. Make as thin as possible.
  10. When tawa is hot, put the roti. Cook it on a low flame from both the sides.
  11. When some brown spots come on both the sides. Roast the roti on the direct flame until dark spots come on both the sides.
  12. When done transfer to a plate.
  13. Mouthwatering 'Jwar Roti And Lehsun Chutney | Village Thali' is ready to be served. Arrange in a plate. Serve it with roasted papad, onion, roasted green chilli, buttermilk.
