Kaju Rava Upma | Cashew Upma is a super easy tea-time snack.

Kaju Rava Upma | Cashew Upma is a healthy and a different version of upma. Besides, for snacks it is also a very good breakfast item. Addition of cashew nuts makes it crunchy and healthy to eat. It requires onion, tomato and ginger which are always available at home. In this recipe you will find a different way of serving the upma. The use of warm water quickens the process of cooking.   • Green chilies is optional.
  • In place of kaju/cashewnuts you can put peanuts.

Ingredients

  • Rava/Semolina - 1/2 cup
  • Ghee/Clarified butter - as required
  • Jeera/Cumin seeds - 1 teaspoon
  • Adrak/Ginger - 1/2 teaspoon grated
  • Curry leaves - a few
  • Pyaz/Onion - 1 small chopped
  • Tamatar/Tomato - 1/2 to 1 chopped
  • Salt - to taste
  • Haldi/Turmeric powder - 1/2 teaspoon
  • Kaju/Cashewnuts - 6 to 7
  • Warm Water - 1 cup
  • Coriander leaves - to garnish

Instructions

  1. In a pan, dry roast the rava for 2 to 3 minutes.
  2. In another pan, heat 1 tablespoon of ghee. Put the cumin seeds, grated ginger, curry leaves and chopped onion. Saute well.
  3. Meanwhile stir the rava while dry roasting it. In the first pan, after onion, add the tomato and salt to taste. Then add the turmeric powder and saute well.
  4. Now, put the cashew nuts and add 1 cup of warm water. Add salt if required and allow it to boil. Add more water if required.
  5. Then, put the dry roasted rava and mix well. Allow it to cook for 2 minutes. Drizzle ghee over the upma as required and garnish with coriander leaves.
  6. For serving, place and level the upma in a small bowl and invert it on a plate, press a cashew nut over it and serve.
  7. The Kaju Rava Upma | Cashew Upma is ready to be served.
