KHAMAN DHOKLA recipe below is by JYOTI BHARAT MEHTA!

Khaman Dhokla or Besan Dhokla is a very popular Gujarati breakfast or snack recipe which is very easy to make. The soft and spongy texture make it a hot favorite of everyone, especially to be enjoyed with green coriander chutney.

Ingredients

  • Chickpea flour / Besan - 150 gm
  • Semolina Flour / Sooji - 50 gm
  • Curd - 2 tablespoon
  • Salt & Sugar as per taste
  • Eno - 1/2 teaspoon
  • Water - Required to make the dhokla batter of thick consistency
  • TADKA
  • Oil - 2 tablespoon
  • Mustard Seeds / Rai - 1/2 tablespoon
  • Asafoetida / Hing - a pinch
  • Curry Leaves - 7 -8
  • Pomegranate Seeds / Chopped Coriander Leaves - For garnishing

Instructions

  1. Mix besan , sooji , curd and little water well to make the batter of thick consistency. Keep the batter aside for 1 hour.
  2. Now add salt, sugar as per taste and eno and mix the batter for 2 minutes.
  3. Now heat a deep pan or kadhai and add half glass of water in it. Now place the dhokla stand in it and take a deep round plate. Grease the plate with ghee and pour the batter evenly in the pan or plate. Place the plate on the dhokla stand.
  4. Now cover the kadhai with a lid and let it cook for 5 minutes. You can check if the dhoklas are done by inserting a knife and if the batter does not stick to the knife, then dhokla is ready.
  5. Now take the round deep plate out of the kadhai and let it cool down. On cooling down, cut the dhokla mix into desired square pieces. Take them out in a plate with a spatula.
  6. For Tadka, add two teaspoon of oil. When the oil is hot, add mustard seeds, hing and curry leaves. Switch off the flame.
  7. Now pour the tadka on the cut square pieces . Garnish khaman dhokla with pomegranate seeds and coriander leaves.
  8. Serve Khaman dhokla with green chutney.
