Kuzhi Paniyaram With Coriander Chutney

Bored of eating dosa?  Try this variation Kuzhi Paniyaram with the same batter which is very unique and delicious. You can add vegetables of your choice to make it colour.

Ingredients

  • FOR THE BATTER : Rice - 3 cups
  • Urad Dal - 1 cup
  • Onion - 2-3
  • Coriander - a handful
  • Green chilli - 2-3
  • Carrot - 1
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10
  • Oil - 2 teaspoons
  • Garam masala - 1 teaspoon
  • Chaat masala - 1/2 teaspoon
  • Salt to taste
  • FOR CORIANDER CHUTNEY: Coriander leaves - half bunch
  • Cumin seeds - 1/2 teaspoon
  • Black salt, white salt - to taste
  • Lemon juice - 1 teaspoon

Instructions

  1. Soak rice and urad dal separately for 3-4 hours.
  2. Grind them separately and mix it. Keep it covered to ferment for 3-4 hours.
  3. Heat oil in a pan and add mustard seeds, chopped greeen chillies, chopped onion and curry leaves.
  4. Add grated carrot and cook for few minutes.
  5. Add this cooked mixture to the fermented batter. Add chopped coriander.
  6. Add salt, garam masala and chaat masala and mix well.
  7. Heat the appe pan and grease the moulds.
  8. Pour batter into each mould and cook on both sides adding oil till it is golden brown.
  9. CORIANDER CHUTNEY :
  10. Add coriander, heeng, black salt, white salt, cumin seeds and lemon juice to a mixer.
  11. Add some water and grind to a smooth paste.
  12. Hot Kuzhi Paniyaram is ready to be served with coriander chutney.
