Macaroni Salad | Mediterranean Macaroni Salad is a delicious and healthy salad for everyone. 

Macaroni Salad | Mediterranean Macaroni Salad is a colourful salad. This uses lots of vegetables and fruits along with macaroni. It has sour, sweet, salty and spicy taste because of the salad dressing. This can be a light dinner or a snack for everyone. It helps in weight loss and detoxes your body as this uses lots of vegetables and fruits. You can easily prepare this salad at home without much efforts and cooking. So, try to make this salad at home and enjoy with your family and friends. Do share your thoughts as well.

Tips and Suggestions by Mom Chef:-

  • You can add veggies and fruits (pineapple etc.) of your choice to make this salad.
  • If you want you can avoid sauteeing the vegetables.
  • While boiling the macaroni add salt and oil to it. Then wash it with cold water to prevent them from sticking to each other.
  • You can prepare the salad dressing as per your taste.

Ingredients

  • Boiled Macaroni - 1 Cup
  • Sliced Carrot - 1 Cup
  • Diced Green Capsicum - 1 Cup
  • Diced Yellow Bell Pepper - 1 Cup
  • Diced Red Bell Pepper - 1 Cup
  • Chopped Tomato - 1 Cup
  • Diced Cucumber - 1 Cup
  • Pomegranate seeds - 1/2 Cup
  • Green & Black Grapes - 1/2 Cup
  • Sliced Onion - 1/2 (optional)
  • Lettuce - as required
  • INGREDIENTS FOR SALAD DRESSING:-
  • Lemon juice - juice of 1 lemon
  • Black pepper powder - as per taste
  • Salt - as per taste
  • Sugar - as per taste
  • Olive Oil - 1 Teaspoon

Instructions

  1. Take a pan and add diced green capsicum, yellow and red bell peppers, sliced carrot. Cover and cook for 2 to 3 minutes. Keep stirring in between. Then let it cool completely. Transfer to the big bowl.
  2. Meanwhile, prepare the dressing. Take a glass bottle and add lemon juice, black pepper powder, salt, sugar, olive oil. Mix well.
  3. Once the sauteed veggies are cooled completely, add chopped tomatoes, diced cucumber, sliced onion, pomegranate seeds, grapes. Toss well.
  4. Add boiled macaroni and toss well.
  5. Add salad dressing, lettuce to the salad just before serving the salad. Mix well.
  6. Delicious and healthy '' is ready to be served.
