Ingredients

  • Raw mangoes/ kachha aam peeled and diced - 1 big bowl
  • Turmeric/ haldi powder - 1 teaspoon
  • Red chili/ lal mirch powder - 1 tablespoon
  • Salt/ namak as per taste
  • Oil/ tel - 5 tablespoons
  • Asafoeida/ hing - 1/4 teaspoon
  • Paanchphoran - 2 tablespoons (Equal quantities of 5 spices Rai, methi daana, saunf. kalonji and jeera)
  • Vinegar - 1 tablespoon
  • Water - 1 bowl

Instructions

  1. Boil water in a pan. Add 1/4 teaspoon of turmeric powder and some salt to boiling water.
  2. Add the diced mangoes. Cook for 2-3 minutes. Strain and keep aside.
  3. Heat oil in a pan. Add hing and paanchphoran masala. Add this to the mangoes and stir properly.
  4. Add some turmeric powder and red chili powder. Mix well and check seasoning. Add vinegar now.
  5. Allow it to cool down completely.
  6. Super tasty 'Instant Mango Pickle' is ready to be served with your meal.
