Mexican Style Rice is mouthwatering rice for everyone. 

Mexican Style Rice is a lip-smacking and cheesy rice preparation. It is a one-pot meal with the flavour of tomato and herbs. This is healthy and protein-rich rice. It uses rice, rajma/kidney beans, tomato, onion, capsicum, cabbage. This is tangy and spicy rice and everyone will love this rice. It can be a good lunch and dinner option for everyone. You can serve it as a tiffin snack to kids as well. Moreover, this is super easy to prepare with easily available ingredients. So, try to make it home and let us know your feedback.

  • You can add veggies of your choice to prepare this dish.
  • Kashmiri Dry red chilli gives a nice colour and it is less spicy. Adjust the spiciness according to your taste.

Ingredients

  • Cooked Rice - 1 big bowl
  • Onion - 1 small finely chopped
  • Tricolour Capsicum - 1/4 Cup finely chopped
  • Shredded Cabbage - 1/4 Cup
  • Mixed Herbs - as per taste
  • Red Chilli Flakes - as per taste
  • Boiled Rajma/Kidney Beans - 1/2 Cup
  • Kashmiri Dry Red Chillies - 1
  • Tomato - 1
  • Salt - as per taste
  • Red Chilli Powder - as per taste
  • Tomato Ketchup - 1 Tablespoon (optional)
  • Grated Cheese - as required
  • Butter - 1 Tablespoon

Instructions

  1. Soak the Kashmiri red chillies for 1/2 an hour. Then grind it with 1 tomato.
  2. Heat butter on a low in a pan.
  3. Add finely chopped onion and saute for few seconds or until it turns translucent.
  4. Add tricolour capsicum and shredded cabbage. Saute for few seconds.
  5. Add mixed herbs, red chilli flakes. Mix well and saute on a high flame.
  6. Then add boiled rajma/kidney beans. Mix well.
  7. Add tomato-chilli paste. Mix well and cook.
  8. Add salt, red chilli powder and tomato ketchup. Mix well and cook for few seconds.
  9. Switch off the flame and add cooked rice. Mix well.
  10. Switch on the flame and cook the rice for a minute. Add grated cheese and mix well.
  11. Delicious 'Mexican Style Rice' is ready to be served.
