Mix Vegetable Korma With Poori is a yummy meal for all.

Mix Vegetable Korma With Poori is a delicious meal for everyone. The Mix Vegetable Korma is made with potato, turnip, peas, beetroot, carrot, French beans, tomato, onion. This is flavoured with coconut, ginger, garlic, sambhar powder. This is a yummy and healthy curry has the goodness and nutrients of all the veggies. The Vegetable Korma is served with the poori made with whole wheat flour, semolina. This is a yummy combination and a complete meal in itself. This meal is very easy to prepare too.

Ingredients

  • FOR POORI:
  • Gehu Aata/ Whole Wheat flour - 1 Cup
  • Fine Sooji/ Semolina - 1/2 Cup
  • Namak/ Salt - as per taste
  • Cheeni/ Sugar - 1 to 2 pinch
  • Paani/ Water - as required
  • Tel/ Oil - for frying
  • FOR MIX VEGETABLE KORMA:
  • Gajar/ Carrot - 2 chopped in small cubes
  • Phaliya/ Beans - 200 Gram chopped
  • Shalgam/ Turnip - 200 Gram chopped in small cubes
  • Matar/ Peas - 1 Cup
  • Chukandar/ Beetroot - 1 big sized chopped in small cubes
  • Aloo/ Potato - 1 big sized chopped in small cubes
  • Pyaaz/ Onion - 1 medium sized chopped in small cubes
  • Sarso/ Mustard seeds - 1/4 Teaspoon
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Curry Patta/ Curry leaves - a spring
  • Tel/ Oil - 2 Tablespoon
  • Namak/ Salt - as per taste
  • FOR MASALA:
  • Pyaaz/ Onion - 1 medium sized
  • Tamatar/ Tomato - 1 big sized
  • Imli/ Tamarind - as per taste
  • Fresh Grated Nariyal/ Coconut - 1/4 Cup
  • Coriander Patta/ Coriander leaves - a handful + for garnishing
  • Roasted Daaliya/ Bengal Gram - 2 Tablespoon
  • Sambhar powder - 2 Tablespoon
  • Hari Elaichi/ Green Cardamom - 2
  • Laung/ Cloves - 4
  • Kali Mirch/ Black Peppercorns - 5 to 6
  • Lehsun/ Garlic - 4 cloves
  • Adrak/ Ginger - 1 inch piece

Instructions

  1. PREPARING THE DOUGH:
  2. In a bowl, add whole wheat flour, fine semolina, salt and sugar. Mix well and make a medium-soft dough by adding water. Keep the dough to rest for an hour.
  3. PREPARING MIX VEGETABLE KORMA:
  4. Heat a pressure cooker.
  5. Add mustard seeds and cumin seeds. Let it splutter. Add curry leaves.
  6. Then add one chopped onion. Sauté it for 2 minutes on a low flame.
  7. Meanwhile, prepare the masala. Grind coriander leaves, tamarind, fresh grated coconut, roasted gram dal, sambhar masala, green cardamom, cloves, black peppercorns, garlic, ginger, tomato, onion to a smooth paste by adding little water.
  8. After onion gets translucent add ground paste to it. Sauté and cook on a high flame until the raw smell gone.
  9. Once the aroma of masala comes, add chopped onion, beans, turnip, beetroot, peas, carrot. Mix well and sauté for 30 seconds.
  10. Then add 2 cups of water to it. Mix well. Add salt to it. Mix well.
  11. Close the lid of pressure cooker and cook it on a medium flame for 2 whistles.
  12. Once done, turn off the gas and let the contents in the cooker cool down.
  13. PREPARING THE POORI:
  14. Heat oil in a kadai for frying.
  15. Take a small ball of the dough, dust it with some flour. Roll it in a small poori using rolling pin.
  16. Once the oil is hot, fry the poori. Fry it on both the sides.
  17. Once done, take it out on a plate.
  18. Garnish the Mix Vegetable Korma with coriander leaves.
  19. Yummy 'Mix Vegetable Korma With Poori' is ready to be served.
