Ingredients

  • Whole wheat bread - 6 slices
  • Baby Spinach - 1/2 Cup , Coleslaw - 1/2 Cup
  • Vegetarian Mayo - 1 Tablespoon
  • Spicy Mustard - 1 Teaspoon
  • Ketchup - 1 Teaspoon
  • Tomato - 1 medium
  • Cucumber - 1 medium
  • Cheese slice - 3
  • Leftover khichadi (Used mixed lentil and white rice khichdi) - 1 Cup
  • Olive Oil - 2 Tablespoon
  • Rolled oats - 1/4 Cup
  • Breadcrumbs - 1/4 Cup
  • Semolina/sooji - 1/4 Cup
  • Salt - to taste
  • Kashmiri mirch powder - 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Coriander powder - 1/2 Teaspoon
  • Greek Yoghurt or Hung curd - 1 Tablespoon

Instructions

  1. For patty:- Mix khichdi, semolina, oats, breadcrumbs, greek yoghurt, salt, chilli powder, turmeric and coriander powder in a large bowl.
  2. Make 3 square-shaped patties.
  3. Add 1 tablespoon olive oil to a non-stick pan.
  4. Cook patties on both sides until golden brown on a medium flame. When cooked set aside.
  5. For the Sandwich:-
  6. Mix chopped coleslaw, mayo, mustard and ketchup in a bowl. Set aside.
  7. Place 1 slice of bread on a plate.
  8. Top with arugula and spinach then place 1/3 coleslaw mix.
  9. Add Sliced tomatoes and cucumber.
  10. Place a patty and top with cheese slice.
  11. Place another slice of bread.
  12. You can grill your sandwich or enjoy as it is.
  13. Yummy Mixed Lentil Patty Sandwich is ready to be served.
