Mixed vegetable raita is a healthy variant of curd salad.

Mixed vegetable raita is a yogurt based salad enjoyed as accompaniment in India. Curd can be paired with various ingredients cause it gives a creamy and tangy flavour to different recipes. We can enjoy this fast special recipe with sabudana khichadi, singhara pakori, singhara poori etc. We can add other vegetables to this mixed vegetable raita recipe( like onion, carrot, green chillies and mustard seed tadka) and serve it to our guests while hosting a party.

Ingredients

  • Cucumber - 1
  • Tomato - 1
  • Roasted jeera powder - 1/4 teaspoon
  • Rock salt - as per taste
  • Crushed pepper powder - as preferred
  • Coriander leaves - for garnishing
  • Curd - half cup

Instructions

  1. Peel cucumber and dice it.
  2. Dice tomato into equal size as cucumber.
  3. In a mixing bowl add cucumber and tomato.
  4. Add curd and the seasoning and mix.
  5. Garnish with coriander leaves.
  6. Yummy mixed vegetable raita is ready to eat.
