Neembu Ka Achaar | Lemon Pickle is a common and popular recipe with health benefits.

Neembu Ka Achaar | Lemon Pickle is a spiced and a tangy condiment, which is super easy to prepare. Pickles are popular condiments in the Indian subcontinent. Lemon pickle is surprisingly easy to make, but it does take patience and time for them to come out just right. Firstly, keep the lemon and salt in an airtight container for 4 to 5 days and then mix it with sugar and spice syrup. You can easily store it for many years, as the day passes it tastes better. Tips and Suggestions by Mom Chef:-

  • Completely dry the lemon before using it.
  • Pick equal-sized thin-skinned lemon for the pickle.
  • If you have a large-sized lemon then cut it into more pieces.
  • You can use any jar to store lemon.
  • The measurement of salt should be perfect otherwise, the pickle may spoil.
  • You can keep the salt-soaked lemon in the sun or in room temperature and stir it occasionally.
  • You can use both sugar and jaggery or only sugar or only jaggery as per your choice.
  • When making the pickle, ensure there is no moisture on the knife, chopping board, bowl, and the jar.
  • You can store it in a glass airtight jar for many years.
  • Adjust the spice as per the requirement.

Ingredients

  • Lemon - 1/2 kg
  • Salt - 4 tablespoons
  • Jaggery/ gud - 25 grams
  • Sugar - 25 grams
  • Water - 1/2 cup
  • Black pepper powder - 1 tablespoon
  • Roasted cumin powder - 1 teaspoon
  • Garam masala/ all spice mix - 1 teaspoon
  • Carom seeds/ ajwain - 1 teaspoon
  • Hing/ asafoetida - 1/4 teaspoon
  • Red chili powder - 2 to 3 tablespoons or as required
  • Black salt - 1 teaspoon or as required

Instructions

  1. Rinse medium-sized thin-skinned lemons very well in water. Then spread them on a kitchen towel and dry it properly.
  2. Now, cut it into pieces and deseed it.
  3. Transfer it into an airtight container and add salt to it. Keep it aside for 4 to 5 days.
  4. Occasionally stir it as it helps salt to dissolve properly.
  5. Further, heat a pan and add sugar, jaggery, and water. Stir it continuously on high flame.
  6. Take 2 to 3 boils and add black pepper powder, roasted cumin powder, garam masala powder, black salt, carom seeds, hing, red chili powder, and mix it properly.
  7. Now, add lemon and saute it on low to medium flame. Turn off the flame and allow it to cool down.
  8. Delicious Neembu Ka Achaar | Lemon Pickle is ready to be served.
