Office Lunch Box – Recipe No. 3 includes mix veg, chapati, sprouts salad, mix fruit raita. This is a healthy and tasty meal for everyone. Now, you can enjoy fruit and veggies in one meal only. This is full of nutritions and a balanced meal for everyone. Moreover, this is hassle-free and easy to prepare. Everyone will not only enjoy but demand you for more such meals. Tips and Suggestions by Mom Chef:-

  • Do not overcook the veggies, keep them little crunchy.
  • Tomato sauce adds a nice tangy and sweet taste to the sabzi. So, do add it.
  • You can use fruits of your choice to make the raita.
  • Add veggies of your choice to make the salad.
  • To make sprouts, first of all, soak the moong overnight or for 6 to 8 hours. Then tie it in a muslin cloth or keep it in an air-tight container overnight.

Ingredients

  • INGREDIENTS FOR MIX VEG:-
  • Tri-colour Capsicum - 1 Cup diced
  • Shredded Cabbage - 1/2 Cup
  • Boiled Potato - 1 diced
  • Tomato - 1 chopped
  • Onion - 1/2 sliced
  • Green Chilli - 1 chopped
  • Ginger - 1/2 inch piece grated
  • Cumin seeds - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Tomato Sauce - 1 Tablespoon
  • Malai/Homemade Cream - 1 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Salt - as per taste
  • Coriander Powder - 1 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon
  • Roasted Cumin powder - 1/4 Teaspoon
  • Chaat Masala - as per taste
  • Garam Masala/All Spice Mix - 1/4 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Oil - 2 Tablespoon
  • INGREDIENTS FOR CHAPATI:-
  • Whole Wheat flour dough - as required
  • Ghee/Clarified butter - as required
  • INGREDIENTS FOR SPROUTS SALAD:-
  • Moong Sprouts - 1 Cup
  • Chopped Cucumber - 1 Tablespoon
  • Chopped Onion - 1 Tablespoon
  • Chopped Tomato - 1 Tablespoon
  • Green chilli - 1 chopped
  • Roasted cumin powder - 1/4 Teaspoon
  • Chaat Masala - as per taste
  • Lemon - 1/2
  • Salt - as per taste
  • Coriander leaves - a handful chopped
  • INGREDIENTS FOR MIX FRUIT RAITA:-
  • Curd - 1 Cup
  • Chopped Banana - 1
  • Chopped apple - 1/2
  • Chopped Pear - 1/2
  • Powdered sugar - 1 Teaspoon
  • Saffron - few strands
  • Cardamom powder - a pinch
  • Dry Nuts (Almonds, Pistachios) - as required

Instructions

  1. PREPARING MIX VEG:- Heat oil in a pan.
  2. Add cumin seeds, asafoetida, grated ginger, green chilli. Saute for few seconds.
  3. Then add tri-coloured capsicum and saute them on a medium flame for a minute.
  4. Add shredded cabbage and saute for few seconds. Then add sliced onion and saute for few seconds.
  5. Add boiled potato and chopped tomato Mix well and cook.
  6. Take a bowl and add tomato sauce, homemade cream/malai, turmeric powder, salt, coriander powder, red chilli powder, roasted cumin powder, chaat masala, garam masala, kasuri methi. Mix well. Add this mixture to the pan. Mix well and cook for couple of minutes then switch off the flame. Mix veg is ready.
  7. PREPARING CHAPATI:- Take a small portion of the dough and roll it to make chapati.
  8. Cook the chapati on a hot tawa. Then roast it in direct flame. Once cooked, take it out. Apply ghee on chapati.
  9. PREPARING SPROUTS SALAD:- Take a bowl and add moong sprouts, chopped cucumber, onion, tomato, green chilli, grated carrot, roasted cumin powder, chaat masala, lemon juice, salt, coriander leaves. Mix well. Sprouts salad is ready.
  10. PREPARING MIX FRUIT RAITA:- Take a bowl and add beaten curs, chopped banana, apple, pear, powdered sugar, saffron strands, cardamom powder, chopped dry nuts. Mix well. Mix fruit raita is ready.
  11. Mouthwatering 'Office Lunch - Mix Veg, Chapati, Sprouts Salad, Mix Fruit Raita' is ready to be served.
