Potato Spinach Soup is a winter delicacy for all.

Potato Spinach Soup is a healthy and tasty soup requires potato, onion, spinach, broccoli. These vegetables cooked and mixed with white sauce to make this delicious soup. This is very soothing for the winter season. This can be a light meal for all family members as well. This is not only delicious but healthy as well. This is quick and easy to prepare which require very fewer efforts. So, try to make this soup at home and relish with family members.

This soup was prepared using Prestige Express Mixer Grinder which we have gifted through Zayka Ka Tadka. 

This tasty soup was prepared by Archana Chakravarthy – A lovely mom from from Karnataka.

Tips and Suggestions by Mom Chef:-

  • Use any vegetables as per the availability and choice.
  • You can also add cauliflower stems as well in the soup.
  • Add garlic to it, it will enhance the flavour and nutritional value of the soup.
  • You can make a dip or soup by adjusting the consistency of it. Make it thick and use as a dip.

Ingredients

  • Onion - 2 small sized
  • Potato - 1
  • Spinach - 1 Cup
  • Broccoli - 1/2 Cup (optional)
  • Cumin seeds - 1/2 Teaspoon
  • Milk - 250 Ml
  • Maida/Refined flour - 1/2 Tablespoon
  • Butter - 2 Tablespoon + 1 Teaspoon
  • Cinnamon powder - 1/4 Teaspoon
  • Salt - as per taste
  • Sugar - 1/4 Teaspoon
  • Black pepper powder - as per taste

Instructions

  1. Take a pressure cooker, add 1 teaspoon of butter and heat it.
  2. Add chopped potato, spinach, onion, broccoli. Saute it for 2 minutes. Add little salt and cook.
  3. Then close the lid and pressure cook it on a high flame for 2 whistles. Let it cool.
  4. Now, prepare the white sauce. Take a pan, add 2 tablespoon of butter and heat it.
  5. Add refined flour, mix well and saute it for a minute.
  6. Add milk and stir it continuously. Bring to a boil.
  7. Add cinnamon powder, salt and little black pepper powder. Mix well.
  8. Meanwhile, take a grinder jar. Add cooked vegetables. Grind it to a smooth paste using Prestige Express Mixer Grinder.
  9. Once boiled, add ground paste to it. Mix well.
  10. Bring it to a boil. Then switch off the gas.
  11. Yummy 'Potato Spinach Soup' is ready to be served. Serve hot.
