Raw Mango Fried Rice | Mavinakayi Chitranna is a yummy recipe made during the summers when Raw Mangoes are found in the market. It is simple but too yummy and delicious and healthy too. It is easy to make with leftover rice and easily available spices. It’s spicy and tangy flavour will give a nice feeling in summers. Suggested for tiffins, picnic, travel, and as part of the full menu under Rice category or can have a light dinner.

Ingredients

  • Cooked Rice - 2 cups
  • Kairi/Raw mango - 1 small peeled and grated
  • Onions - 2 sliced thinly
  • Peanuts - 1/2 cup
  • Roasted chana/phutana - 1/4 cup
  • Green Chilli - 1 to 2 finely chopped
  • Curry leaves - 2 springs
  • Fresh Coriander - for garnishing finely chopped
  • Salt - as per taste
  • Turmeric/Haldi powder - 1/4 teaspoon
  • Red Chilli /Lal Mirch powder - 1/2 teaspoon
  • All Spices Mix/ Garam Masala - a pinch
  • Fresh Mint Leaves - a handfull
  • Hing/ Asafoetida- a pinch
  • Cumin/Jeera - 1/2 teaspoon
  • Mustard/Rai - 1/2 teaspoon
  • Dry Red Chillies - 2
  • Oil - 1 tablespoon
  • Sambar Masala - 1/2 teaspoon (optional)

Instructions

  1. Heat oil. Add asafoetida , mustard seeds, cumin seeds, curry leaves and dry red chilli for tadka.
  2. Add Peanuts and fry them. Add roasted split Chana/Phutana to it. Mix Well.
  3. Add green chillies and onions. Mix Well. Add grated raw mango and cook.
  4. Add salt, turmeric, red chilli powder and all spice mix to rice. Mix them. Then add it to the wok. Mix them all.
  5. Or Alternatively add spices to the wok and then add cooked rice to it. Mix well.
  6. Cook for 2-3 mins. Optionally can add little sambhar masala too.
  7. Garnish with fresh coriander and/or fresh Mint leaves.
  8. Delicious Hot Raw Mango Fried Rice is ready to serve with Raita, chutney or just enjoy on its own.
