Ingredients

  • FOR FRYING POTATO :
  • Potato / Aloo - 2 Sliced
  • Oil - For frying
  • FOR PREPARING ALOO CAPSICUM SABZI :
  • Capsicum / Shimla mirch - 2 Sliced
  • Tomato / Tamatar - 2 Sliced
  • Oil - 1 Tablespoon
  • Cumin seeds / Jeera - 1 Teaspoon
  • Mustard seeds / Rai - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Grated ginger / Adrakh - 1 Inch
  • Green chilli / Hari mirchi - 2 Finely chopped
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Salt - As per taste
  • Red chilli powder / Lal mirch powder - 1 Teaspoon
  • Coriander powder / Dhaniya powder - 2 Teaspoons
  • Cumin seeds powder / Jeera powder - 1 Teaspoon
  • Coriander leaves / Hara dhaniya - A handful

Instructions

  1. FOR FRYING POTATO :
  2. Heat oil in a pan for frying. Add potato and fry it for 3 to 4 minutes on medium flame. Stir it occasionally.
  3. Deep fry it until they become crispy and golden brown from all sides. Then, take it out on a plate. Keep it aside.
  4. FOR PREPARING ALOO CAPSICUM SABZI :
  5. Heat oil in a pan. Add cumin seeds, mustard seeds, asafoetida, ginger, green chilli, and capsicum. Mix well.
  6. Now add tomato. Mix well. Saute it for 2 to 3 minutes on a high flame.
  7. Then add turmeric powder, salt, red chilli powder, coriander powder, and cumin seeds powder. Mix well and add fried potato. Mix well for 1 to 2 minutes.
  8. Once done, garnish it with coriander leaves and take it out to a serving bowl.
  9. 'Shimla Mirch Sabji | Aloo Capsicum Sabzi' is ready to be served.
