Sooji Mini Uttapam is an instant breakfast option.

Sooji Mini Uttapam is a quick, easy breakfast item. It is made with semolina, curd, onion, tomato, sweet corn and flavoured with mixed herbs, red chilli powder and black pepper. It is a 5-minute hassle-free recipe to be made. This is tasty as well healthy breakfast. It is very colourful as well, kids are going to love this dish. Ingredients

  • Barik Sooji/Fine Semolina - 1 Cup
  • Curd - 1/2 Cup
  • Water - as required
  • Salt - as per taste
  • Red chilli powder - as per taste (Optional)
  • Black pepper powder - 1/2 Teaspoon or as per taste
  • Onion - 1 finely chopped
  • Green chilli - 1 finely chopped
  • Tomato - 1 finely chopped
  • Sweet corn - 1/4 Cup boiled
  • Mixed herbs - 1/4 Teaspoon (optional)
  • Coriander leaves - a handful chopped
  • Oil - as required for roasting

Instructions

  1. In a bowl, add fine semolina, curd, little water, black pepper powder, mixed herbs, and salt. Mix well to make a thick batter. Rest the batter for 10 minutes. (you can make the uttapam instantly as well)
  2. Now, heat a pan. Grease it with oil.
  3. Pour a spoonful of batter and make a small, thick uttapam. (you can mix the veggies to the batter, too)
  4. Top it with finely chopped onion, sweet corn, green chilli, coriander leaves, and tomato. (you can use any other vegetables that may be available) Lightly press it with a spatula.
  5. Drizzle some oil on top. Cook it on a medium-low flame.
  6. Once it is cooked from one side, flip it, and cook the other side too. Lightly press and cook the uttapam.
  7. Sprinkle some black pepper powder, mixed herbs, and red chilli powder on the uttapam.
  8. Once done, transfer it to a serving plate.
  9. Yummy 'Sooji Mini Uttapam' is ready to be served with tomato ketchup.
