South Indian filter coffee is the first thing that comes to my mind early in the morning. South Indian filter coffee is made with a stainless steel coffee drip maker, which is used to collect coffee decoction – the main ingredient.

Ingredients

  • Filter coffee powder - 2 tablespoons
  • Boiling water - 3/4th cup
  • Milk - 3/4th cup
  • Sugar - as per taste

Instructions

  1. Heat water till it starts boiling.
  2. Add coffee powder to the top compartment of the stainless steel coffee drip maker and keep the weight on top of it (the weight is the one with long stem).
  3. Pour hot water in top compartment, close the lid and leave it for 2-3 minutes. The coffee decoction will drip into the lower compartment and gets collected there.
  4. Add 1/4 cup of coffee decoction, 3/4th cup milk and sugar into a vessel and heat it.
  5. While the vessel is heating, transfer the coffee from the vessel to cup and back to the vessel few times, so that the froth forms on top. Let it come to a boil now.
  6. Transfer the coffee to a steel tumbler and enjoy the south Indian filter coffee while it is hot!
