Ingredients

  • Pumpkin - 300 Grams
  • Asafoetida - a pinch
  • Kalonji/Onion seeds - 1 Teaspoon
  • Fennel seeds - 1 Teaspoon
  • Fenugreek seeds - 1 Teaspoon
  • Black pepper corns - 1/2 Teaspoon
  • Cloves - 2-3
  • Jaifal/Nutmeg - 1
  • Dry red chilies - 1-2
  • Dry mango powder - to taste
  • Grated garlic and green chilies - 1 teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Red chili powder - 1/2 Teaspoon
  • Coriander powder - 1 Tablespoon
  • Salt to taste
  • Cooking oil - 2 Tablespoon

Instructions

  1. Wash, peel the pumpkin and cut into cubes.
  2. Heat oil in a pan and add asafoetida, grated garlic and chilies and all whole spices as mentioned.
  3. After few seconds, add the pumpkin cubes and mix well. Cover and cook for 2 minutes.
  4. Add all dry grounded spices and salt now, mix well and cook for another 10 minutes.
  5. Check the curry and turn off the flame when done.
  6. Nutritious Spicy Pumpkin curry is ready to be served. Garnish with coriander leaves and serve.
