Ingredients

  • Maida/Refined flour - 1 Cup +1/4 Cup
  • Powdered Sugar - 1 Cup + 1 Tablespoon + 1/4 Cup
  • Baking soda - 1/2 Teaspoon
  • Baking Powder - 1/2 Teaspoon
  • Fresh Dahi/Curd - 1/2 Cup
  • Oil - 1/2 Cup
  • Vanilla essence - 1 Teaspoon
  • Water - less than 3/4 Cup
  • Milk - 2 Tablespoon
  • Pineapple - 2 slices
  • Pineapple Juice - 2 Tablespoon
  • Strawberries - 6 + 4 for garnishing
  • Homemade Malai/Cream - 1/2 Cup

Instructions

  1. In a mixing bowl, add dahi/curd, oil, vanilla essence and water. Whisk it properly.
  2. Seive maida, baking powder, baking soda in a bowl. Then add 1 cup powdered sugar and mix.
  3. Add refined flour mixture (dry ingredient) to curd mixture (wet ingredients) in batches. Mix it using cut and fold method. Add milk to form a falling consistency.
  4. Meanwhile, pre-heat the oven at 180 degree Celsius for 10 minutes.
  5. Transfer the batter in a greased baking pan or tin. Bake the cake in preheated oven for 25 to 30 minutes at 180 degree Celsius.
  6. Once the cake is bakes, take it out. Let it cool for couple on minutes. Then de-mould it. Let the cake cool completely. You can refrigerate the cake.
  7. Meanwhile, heat a pan. Add chopped 6 strawberries and 1 tablespoon sugar. Let it cook for 5 to 10 minutes or until the mixture turns thick. Once done, switch off the flame and let it cool completely.
  8. In a big bowl put ice cubes. Put another bowl on ice cubes. Pour the malai/homemade cream.
  9. Beat with beater until it turns thick. Then add 1/4 cup powdered sugar. Beat it again until it forms peak. Then mix the strawberry sauce to the cream. Beat it for a minute. Then keep the cream it the refrigerator for 15 minutes to set.
  10. Now, cut the cake into two layers. Sprinkle pineapple juice on both the layers.
  11. Take once layer and spread the cream. Arrange the pineapple slices. Cover it with another cake spice. Spread the cream on top and smoothen it.
  12. Finish the cake by garnishing it with strawberries and pineapple slices. Let it set in the refrigerator.
  13. Delicious 'Strawberry and Pineapple Cake' is ready to be served.
