Ingredients

  • FOR THE WHITE BASE
  • Sooji/Semolina - 1 cup
  • Curd - 1/2 cup
  • Water - 1 cup
  • Lemon juice - 1 tablespoon
  • Sugar - 1 tablespoon
  • Salt to taste
  • FOR THE YELLOW BASE
  • Besan/chickpea flour - 1 cup
  • Curd - 1 cup
  • Water - 2 cups
  • Turmeric powder - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1 tablespoon
  • Salt to taste
  • STUFFING
  • Boiled potato - 2
  • Oil - 1 tablespoon
  • Chopped onion - 1/2 cup
  • Mustard seeds/Rai - 1/2 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Dry mango/amchur powder - 1 teaspoon
  • Dal masala - 1 teaspoon
  • Salt to taste
  • TADKA
  • Mustard seeds - 1 tablespoon
  • Green chilli - 1
  • Curry leaves - a few

Instructions

  1. Mix all the ingredients of the white base and make a smooth batter with water.
  2. Mix all ingredients of yellow base and make smooth batter with water.
  3. For the stuffing, heat up oil, add the mustard seeds until it splutters. Add onion, mashed potato and all spices and mix it until all the ingredients are blended. Make small flat balls out of this stuffing.
  4. Grease a muffin cup with oil. Pour one spoon white batter, then put the stuffing ball and finally pour yellow batter on top of the stuffing.
  5. Steam the cup for 10 minutes.
  6. For the tadka, heat up the oil and add the mustard seeds until it splutters. Add the curry leaves and chilli to it.
  7. Take the sandwich out of the muffin cup and pour the tadka over it. Serve your Stuffed Sandwich Dhokla and relish it!
