Tomato Bath With Coconut Chutney is a yummy meal for all.

Tomato Bath With Coconut Chutney is a mouthwatering South Indian Style rice preparation. It uses rice, lots of tomatoes, onion, coconut, green chillies, tamarind, groundnuts and some spices. This goes well with spicy coconut chutney. This tomato flavoured rice preparation is a yummy complete meal. This a spicy, tangy, healthy and delicious one pot meal for everyone. This is a treat for spicy food lovers.

This yummy rice is prepared by Rajalakshmi Mahesh – A visually challenged mom and a working professional from Coorg, Karnataka.

Ingredients

  • FOR TOMATO BATH:
  • Chawal/ Rice - 2 Cup
  • Paani/ Water - 4 Cup
  • Moongfali/ Groundnuts - 1/2 Cup
  • Hari Mirch/ Green chilli - 5 to 7 or as per taste
  • Pyaaz/ Onion - 2 finely chopped
  • Tamatar/ Tomato - 6 medium sized
  • Hara Matar/ Green peas - 1 Cup
  • Namak/ Salt - as per taste
  • Laal Mirch powder/ Red chilli powder - 1 Teaspoon
  • Tel/ Oil - 6 Tablespoon
  • FOR MASALA:
  • Fresh Nariyal/ Coconut - 1 Cup
  • Tamatar/ Tomato - 1
  • Adrak/ Ginger - 1 inch piece
  • Lehsun/ Garlic - 5 to 6
  • Dal Chini/ Cinnamon - 1 small stick
  • Laung/ Cloves - 4
  • Haldi powder/ Turmeric powder - a pinch
  • Sambhar powder - 1/2 Teaspoon
  • Imli/ Tamarind water - as per taste
  • Curry Patta/ Curry leaves - few
  • FOR COCONUT CHUTNEY:
  • Fresh Grated Nariyal/ Coconut - 1 Cup
  • Imli/ Tamarind water - 1 lemon sized tamarind soaked in water
  • Namak/ Salt - as per taste
  • Hari Mirch/ Green Chilli - 7 or as per taste
  • Dhaniya Patta/ Coriander leaves - a handful
  • Curry Patta/ Curry leaves - a handful
  • Paani/ Water - 1/2 Cup
  • Tel/ Oil - 2 Tablespoon
  • Sarso/ Mustard seeds - 1/2 Teaspoon
  • Urad dal - 1/2 Teaspoon
  • Lehsun/ Garlic - 4 cloves

Instructions

  1. PREPARING MASALA:
  2. Grind fresh grated coconut, tomato, ginger, garlic, cinnamon, cloves, turmeric powder, sambhar powder, tamarind water, and curry leaves in a grinder jar to a smooth paste.
  3. PREPARING TOMATO BATH:
  4. Heat oil in a pressure cooker.
  5. Add groundnuts and sauté them.
  6. Then add slit green chillies and sauté again.
  7. Add finely chopped onion and sauté the mix on a medium flame for 2 to 3 minutes.
  8. Once the onion turns pinkish, add chopped tomato. Mix and cook until the tomato becomes soft.
  9. Then add ground masala to it. Mix well and cook on high flame for 2 minutes.
  10. Add green peas and salt. Mix well.
  11. Then add 4 cups of water to it. Mix well. Bring it to a boil.
  12. Once boiled, add washed rice to it. Mix well.
  13. Add red chilli powder and mix well.
  14. Close the lid of pressure cooker and cook the rice for 3 whistles on a high flame.
  15. Once done, turn off the flame and let the cooker cool.
  16. After cooling, open the lid and garnish the tomato bath with coriander leaves.
  17. PREPARING COCONUT CHUTNEY:
  18. Grind fresh grated coconut, tamarind water, salt, green chilli, coriander leaves, half of the curry leaves, and water in a grinder jar to a smooth paste.
  19. Now, add to a kadai or pan and heat it.
  20. Add mustard seeds and let them splutter. Then add crushed garlic to it and sauté it.
  21. Then, add black gram without skin and sauté it. After that turn off the gas.
  22. Add curry leaves and mix well.
  23. Add ground chutney to kadai and mix well. The chutney is ready.
  24. Yummy 'Tomato Bath With Coconut Chutney' is ready to be served.
