Veg Cheesy Quesadilla is a lip-smacking dish for everyone. 

Veg Cheesy Quesadilla is a filling and healthy meal option. It is a perfect option when you do not have much time to cook or want to eat something different. This uses leftover roti that makes it taste out of the waste recipe. However, you can use fresh roti as well to prepare this dish. This has veggies like onion, tomato, tri-colour capsicum, sweet corn and paneer/cottage cheese. You can serve it as as an after school snack for kids or evening tea time snack for all. It gets ready quickly within minutes. So, try to make this at home and enjoy with your family. Do share your feedback as well.

Ingredients

  • Leftover Roti - 2
  • Tomato - 1 finely chopped
  • Tricolour Capsicum - 1/2 Cup finely chopped
  • Sweet Corn - 1/4 Cup parboiled
  • Onion - 1 small sized finely chopped
  • Grated Cheese - 1/4 Cup or as required
  • Paneer/Cottage Cheese - 1/4 Cup grated or crumbled
  • Mixed Herbs - as per taste
  • Red Chilli Flakes - as per taste
  • Black Pepper Powder - as per taste
  • Salt - as per taste
  • Ghee/Clarified Butter - as required for roasting

Instructions

  1. Take a bowl and add finely chopped onion, tomato, tri colour capsicum, parboiled corn, grated paneer/cottage cheese, mixed herbs, red chilli flakes, black pepper powder, salt. Mix well.
  2. Take a roti and spread the mixture on the half part of roti. Spread some grated cheese then fold the roti.
  3. Meanwhile, heat a tawa or pan.
  4. Roast the quesadilla on a medium flame. Apply ghee on both the side and roast it until crisp from both the sides. Then take it out and cut into pieces.
  5. Delicious 'Veg Cheesy Quesadilla' is ready to be served.
