Vegetable Biryani With Cucumber Raita is a yummy one-pot meal.

Vegetable Biryani With Cucumber Raita is a delicious rice preparation made with rice, onion, tomato, mint leaves, garlic, French beans, carrot, potato, peas and Indian spices. Vegetable Raita is made with curd, cucumber, onion, tomato, fresh coconut and green chilli. It is a one-pot meal which is very easy to prepare too. It is very healthy with the goodness of veggies. You can add the veggies as per your choice and availability. It is generally served with Cucumber Raita or any type of raita. It is a mouthwatering meal for everyone. Ingredients

  • FOR VEGETABLE BIRYANI:-
  • Chawal/ Rice - 1 Cup
  • Laung/ Cloves - 5
  • Hara Elaichi/ Green Cardamom - 1 to 2
  • Jeera/ Cumin seeds - 1/2 Teaspoon
  • Kali Mirch/ Black peppercorns - 1/2 Teaspoon
  • Pyaaz/ Onion - 1 Chopped
  • Tamatar/ Tomato - 1 Chopped
  • Pudina Patta/ Mint leaves - a handful
  • Chopped Lehsun/ Garlic - 4 to 5 cloves
  • Dhaniya Patta/ Coriander leaves - a handful chopped
  • Kaju/ Cashew nuts - 7 to 8
  • Jeera powder/ Cumin powder - 1/2 Teaspoon
  • Kali Mirch powder/ Black Pepper powder - 1/2 Teaspoon
  • Namak/ Salt - as per taste
  • French Beans - 1/4 Cup chopped
  • Gajar/ Carrot - 1/4 Cup chopped
  • Aloo/ Potato - 1 chopped
  • Hara Matar/ Green Peas - 1/4 Cup
  • Haldi powder/ Turmeric powder - a pinch
  • Laal Mirch powder/ Red Chilli powder - 1/2 Teaspoon
  • Dahi/ Curd - 2 Tablespoon
  • Garam Paani/ Hot Water - 2 Cup
  • Tel/ Oil - 2 to 2 and 1/2 Tablespoon or more
  • Ghee/ Clarified butter - 1 Tablespoon
  • FOR CUCUMBER RAITA:
  • Fresh Dahi/ Curd - 1/2 Cup
  • Pyaaz/ Onion - 1 Chopped
  • Kheera/ Cucumber - 1 Chopped
  • Tamatar/ Tomato - 1 Chopped
  • Fresh Grated Nariyal/ Coconut - 1 Tablespoon
  • Hari Mirch/ Green Chilli - 1 finley Chopped
  • Namak/ Salt - as per taste
  • Cheeni/ Sugar - a pinch

Instructions

  1. PREPARING VEGETABLE BIRYANI:
  2. Wash and soak rice for atleast 10 minutes in water.
  3. Heat water in a pan. (The ratio of rice and water should be 1:2)
  4. Heat oil and ghee in a pressure cooker (use half the quantity of oil and half quantity of the ghee to make Veg Biryani).
  5. Add cloves, green cardamom and cumin seeds. Saute for few seconds.
  6. Now, add chopped onion and sauté it on a medium flame for 2 to 3 minutes.
  7. Add chopped garlic, mint leaves and coriander leaves. Mix well and cook. Then add chopped tomato and sauté it. Cook until tomato turns soft (if you feel that the oil is less then add a tablespoon of oil to it).
  8. Add cashew nuts and mix well.
  9. Add jeera powder, black pepper powder and salt. Mix well.
  10. Now, add chopped French beans, carrot, potato and peas. Mix well and cook.
  11. Then add turmeric powder and red chilli powder. Mix well and cook.
  12. Add hot water to it. Add curd to it and mix well. Cover it and bring the water to boil.
  13. When the water boils then add soaked rice to it. Mix well.
  14. Secure the lid of pressure cooker and cook the biryani for 2 whistles on a high flame.
  15. Once done, turn off the flame and let the biryani cool on its own.
  16. Once cooled, take out on a serving plate.
  17. PREPARING CUCUMBER RAITA:-
  18. In a bowl, add chopped veggies, curd, salt and sugar. Stir well.
  19. Yummy 'Vegetable Biryani' is ready to be served with Cucumber Raita.
