Vegetable Raita | South Indian Recipe is a yummy side dish for a meal.

Vegetable Raita | South Indian Recipe is made with cucumber, onion, tomato, carrot, green chilli, curd. The tadka of asafoetida and mustard seeds added to the raita. It enhances the flavour of the dish. It is very easy and gets ready in just 5 minutes. This goes well with Bisibele Bath, Vegetable Biryani.

This yummy dish made by A 87-years-old Grandmom from the Goldfields of Kollar, Karnataka – Rukmini Aunty.

Ingredients

  • Cucumber - 1
  • Carrot - 1
  • Green chilli - 1 slit and deseeded
  • Tomato - 1
  • Coriander leaves - few
  • Curd - 1 Cup
  • Oil - 1 Teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Heeng/Asafoetida - a pinch
  • Salt - as per taste

Instructions

  1. Chop all the veggies into cubes and cut the green chilli. Mix veggies and curd together. ( you can add veggies of your choice)
  2. Heat a tadka pan, add oil. Add heeng and mustard seeds. Let it splutter.
  3. Pour this tadka to the raita. MIx well. Add salt and mix well.
  4. Yummy 'Vegetable Raita' is ready to be served with Bisibele Bath.
