Zuchhini/Turai Sabzi : Tasty Curry

Zucchini, also knows as “Turai” is a very good source of fibre and is good for digestion. It also aids in relieving stomach related diseases in kids like constipation, bowl movements, etc. It is advisable to serve healthy zucchini curry to the nursing mothers too as it is nutritious and easily digestible. So lets start with the preparation of this awesome curry.

Try this curry with Garlic Tawa Naan , Tandoori Roti or Lacchedar Ghee Roti

Ingredients

  • Zucchini - 1 of medium size
  • Green chilies -1
  • Salt as required
  • Jeera/Cumin seeds - 1/2 tablespoon
  • Hing/Asafoetida - A pinch
  • Ghee - 2 tablespoon
  • Garlic cloves -2
  • Tomato -1
  • Coriander leaves - As per requirement for garnishing
  • SPICES
  • Turmeric - 1/2 tablespoon
  • Red chilli powder - 1/2 tablespoon
  • Coriander powder - 1/2 tablespoon
  • Kitchen King Vegetable Curry masala (optional) - 1/2 tablespoon

Instructions

  1. Wash, peel and chop the zucchini into small pieces. Chop green chillies, garlic, tomatoes & coriander leaves.
  2. Heat ghee in a pan and add asafoetida and cumin seeds & garlic cloves.
  3. Saute the above mix for about 1 minute and add green chilies, salt and spices to it.
  4. Cook the spices mix for a minute and add tomatoes to it. Cover the pan for a minute and cook the tomatoes well.
  5. Add zucchini and cook it covered for 5 to 7 minutes. Garnish with coriander leaves.
  6. "Zucchini curry" is ready now. Serve it hot with chapaties/ Phulkas.
