Almond Broccoli Soup is a super quick and packed with nutrients. The broccoli, potato, onion, garlic cooked together then mixed with white sauce to make this yummy soup. It is served with roasted almonds and cheese. This enhances the flavour and nutrition of the soup. This is a light dinner option or a very good evening snack too. This soup is creamy and nutty. This is a quick and easy soup one should try because it is rich in different types of vitamins, folic acid and fibre. So, try to make this soup for this winter season and enjoy with your family.

Ingredients

  • Milk - 3/4 Cup
  • Cornflour - 1 Tablespoon
  • Butter - 1 Tablespoon
  • Potato - 1 diced
  • Garlic - 3 to 4 cloves
  • Broccoli - 200 gram cut into florets
  • Onion - 1 diced
  • Roasted almond (sliced) - as required for garnishing
  • Cheese ( grated ) - as required for garnishing
  • Cream - 1 Tablespoon (optional) for garnishing
  • Black pepper powder - as per taste
  • Salt - as per taste

Instructions

  1. Take a 2 and 1/2 cups of water in a vessel. Add florets of broccoli, diced potato, onion, garlic cloves and salt. Boil it to cook all the veggies. Once the veggies gets cooked, switch off the gas and let it cool completely. Then make puree of it.
  2. Take a pan, add milk along with corn flour and butter. Stir it continuously and bring it to boil.
  3. Once it gets thickened, add broccoli puree. Mix well and bring it to boil.
  4. Add little salt and black pepper powder. Mix well and cook. When done switch off the gas.
  5. Take a serving bowl, pour the soup. Garnish it with roasted sliced almond and grated cheese.
  6. Yummy 'Almond Broccoli Soup' is ready to be served. Serve hot.
