Ingredients

Baby potato - 250 Gram
Besan/gram flour - 4 Tablespoon
Salt - as per taste
Orange food colour - a pinch
Red chilli powder - 1 Teaspoon
Chat masala - 1/2 Teaspoon
Ajwain/carom seed - 1 Teaspoon
Oil - for deep frying
Hing/asafoetida - a pinch

Instructions

Parboil the potatoes. Peel the skin and keep aside.
In a bowl, add all the dry masalas and besan. Make a batter by adding water. The batter should be of medium consistency.
Heat enough oil in a kadai/wok. Add the potatoes to the batter and coat them properly with the batter.
Fry potatoes until crisp on a low flame. Take it out on a kitchen towel to soak excess oil.
Yummy 'Aloo Ke Baroole' is ready to be served. Serve with green chutney and sauce.
Note: You may flatten the potatoes a bit if you wish. You can make this dish without peeling the skin of the potato.
