Aloo Mungfali Ki Sabji is an easy side dish to make with easily available ingredients from your kitchen. You just need boiled potato, roasted peanuts, and some spices. It is a protein and calcium-rich sabji with special masala. Peanuts masala makes this sabji unique from a regular aloo sabji. Whenever you are in hurry to make a kid’s tiffin or an office lunch box, this recipe will help you a lot. Moreover, you can serve it for lunch, or dinner as well. It does not require much preparation and cooking time. Ingredients

  • FOR PREPARING PEANUTS MIXTURE :
  • Roasted peanuts / Moongfali - 1 Cup
  • Garlic / Lahsun - 10 to 12 Cloves
  • Sesame seeds / Til - 1 tsp
  • Dry mango powder / Aamchur powder - 1 tsp
  • Red chili powder / Lal mirch powder - 2 tsp
  • Coriander powder / Dhaniya powder - 2 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • FOR PREPARING ALOO MUNGFALI KI SABJI :
  • Oil - 2 tbsp
  • Mustard seeds / Rai - 1/2 tsp
  • Cumin seeds / Jeera - 1/2 tsp
  • Asafoetida / Hing - A pinch
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Salt - As per taste
  • Boiled potato / Aloo - 3 to 4 Peeled and chopped
  • Dry fenugreek leaves / Kasuri methi - 1/2 tsp
  • Coriander leaves / Hara dhaniya powder - A handful
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING PEANUTS MIXTURE :
  2. Take roasted peanuts, garlic, sesame seeds, dry mango powder, red chilli powder, coriander powder, and all spice mix powder in a grinding jar. Grind them for a few seconds. Once done, take it out to a bowl.
  3. FOR PREPARING ALOO MUNGFALI KI SABJI :
  4. Heat oil in a pan. Add mustard seeds, cumin seeds, asafoetida, turmeric powder, and ground peanuts mixture. Mix well for a few seconds on a medium flame.
  5. Now add salt and mix well. Further, add boiled potato. Mix well. Saute it for 1 to 2 minutes on medium flame.
  6. Finally, add dry fenugreek leaves and coriander leaves. Mix well and take it out to a serving bowl.
  7. 'Aloo Mungfali Ki Sabji' is ready to be served.
