Ingredients

  • Whole Wheat Dough / Gehu Ka Aata - As required
  • Whole Wheat Flour / Gehu Ka Aata - As required
  • Onion / Pyaz - 1 Sliced
  • Roasted Gram Flour / Bhuna Besan - 1 tbsp
  • Salt - As per taste
  • Red Chilli Powder / Lal Mirch Powder - 1/2 tsp
  • Coriander Powder / Dhaniya Powder - 1/2 tsp
  • Anardana Powder - 1 tsp
  • Carom Seeds / Ajwain - 1/2 tsp
  • Green Chilli / Hari Mirchi - 1 to 2 Finely chopped
  • Coriander Leaves / Hara Dhaniya - A handful
  • Oil - 1 tsp
  • Onion Seeds / Kalonji - As required
  • Clarified Butter / Ghee - As required
  • Butter - As required
  • tsp = teaspoon

Instructions

  1. Take onion in a mixing bowl. Add roasted besan, salt, red chilli powder, coriander powder, anardana powder, carom seeds by rubbing between your palms, green chilli, coriander leaves, and oil. Mix well.
  2. Take medium soft wheat dough and make two round shaped small circular pedas from the dough. Dust it with flour and roll a peda to make a roti and keep it aside. Make another roti.
  3. Take one roti. Then spread the prepared onion stuffing on it. Place the other roti over it. Carefully seal the paratha borders.
  4. Now Make small vertical slits on the roti. Now fold a strip like a roll. Put the first roll into a second strip and fold a strip like a roll. Likewise, roll all strips together.
  5. Then keep the roll vertically. Add coriander leaves, kalonji, and add some whole wheat flour on it and press it. Dust it with flour and roll a peda to make a paratha.
  6. Meanwhile, heat a Prestige Durastone Hard Anodised 6 Layer Non-Stick Tawa. Add ghee on it. Place the prepared paratha on the tawa. Cook on one side.
  7. Flip it once it is slightly brown, apply ghee on both sides and cook it on a low to medium flame. Press the paratha while cooking it to make it crispy.
  8. Once done. Take it out on the butter paper and press slightly inside. Now apply butter on it and take out it on the serving plate.
  9. 'Amritsari Lachha Pyaz Paratha' is ready to be served.
