Ingredients

  • Leftover Rice/Bache hue Chawal - 1 Cup
  • Leftover Dal/Bachi Hui dal - 1/2 Cup
  • Mixed Veggies - 1/2 Cup chopped
  • Onion - 1 finely chopped
  • Boiled potato - 2 medium sized
  • Grated Carrot - 1
  • Grated Ginger - 1/2 inch piece
  • Green Chilli - 1 crushed
  • Lemon - juice of 1/2 lemon
  • Coriander Leaves - 2 Tablespoon chopped
  • Bread Crumbs - crumbs of 2 bread or more + for coating
  • Besan/Gram flour/Chickpea flour - 2 Tablespoon or more
  • Red Chilli Powder - 1/2 Teaspoon or as per taste
  • Garam Masala/All spice mix - 1/2 Teaspoon
  • Jeera/Cumin powder - 1/2 Teaspoon
  • Salt - as per taste
  • Oil - as required for shallow frying

Instructions

  1. Take a bowl and add leftover rice, dal, chopped veggies, onion, mashed boiled potato, grated carrot, ginger, crushed green chilli, chopped coriander leaves, lemon juice, salt, red chilli powder, cumin powder, garam masala, gram flour, bread crumbs. Mix well. Add gram flour and bread crumbs more if the mixture seems wet and difficult to handle.
  2. Now, make cutlets out of the mixture. Coat them with bread crumbs.
  3. Meanwhile, little oil in a pan for shallow frying.
  4. Shallow fry the cutlet on medium-low flame from both the sides. Once they turn nice golden brown from both the sides, take them out.
  5. Delicious Cutlets from leftover food are ready to be served.
