Bhindi Ka Bharta is a delicious winter special sabji.

Bhindi Ka Bharta is a simple but unique method to prepare bhindi sabji. You just need bhindi, tomato, garlic, and some spices to prepare this amazing side dish. It is different than the regular bhindi sabji. In addition, it tastes amazing with paratha. This is the easiest sabji to make for a tiffin box on a busy morning or for a weekday dinner. This is Recipe No. 2 of the Mom Ka Tadka Season-2 prepared by a lovely Mom: Vijay Haldiya 

Tips and suggestions by the Mom Chef:

  • It is recommended to use mustard oil to prepare this sabji.
  • A pinch of sugar should be added to retain the green color of the bhindi.
  • To remove the stickiness of bhindi :
  • Apply oil to the knife before chopping the bhindi.
  • Add lemon juice to the chopped bhindi and mix well.

Ingredients

  • FOR SAUTEED BHINDI :
  • Lady finger / Bhindi - 250 Gms chopped
  • Oil - 1 tbsp
  • Garlic / Lahsun - 3 to 4 Cloves finely chopped (optional)
  • Sugar - A pinch
  • Tomato / Tamatar - 1 Finely chopped
  • FOR PREPARING BHINDI KA BHARTA :
  • Mustard oil / Sarso ka tel - 2 tbsp
  • Cumin seeds / Jeera - 1 tsp
  • Asafoetida / Hing - A pinch
  • Green chilli / Hari mirchi - 2 Slited
  • Onion / Pyaz - 1 Finely chopped
  • Tomato / Tamatar - 2 Finely chopped
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Dry mango powder / Aamchur - 1/2 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR SAUTEED BHINDI :
  2. Heat oil in a pan. Add bhindi, garlic, and sugar. Mix well. Saute it for 2 to 3 minutes on medium flame.
  3. Now add tomato. Mix well. Saute it for 4 to 5 minutes on medium flame. Then turn off the flame and mash it using a masher. Keep it aside.
  4. FOR PREPARING BHINDI KA BHARTA :
  5. Heat mustard oil in a pan. Add cumin seeds, asafoetida, green chilli, and onion. Mix well.
  6. Saute it for 2 to 3 minutes on medium flame. Then add tomato. Mix well.
  7. Further, add salt, turmeric powder, red chilli powder, coriander powder, and all spice mix powder. Mix well.
  8. Now add dry mango powder. Mix well. Now add sauteed and mashed bhindi. Mix well and garnish it with coriander leaves. Take it out to a serving bowl.
  9. 'Bhindi Ka Bharta' is ready to be served.
