Chickpea Vegetarian Protein Rich Salad is a nutritious as well as a delicious meal. This has chickpeas, broccoli, orange, leafy vegetables like spinach, lettuce and rocket leaves. Adding shredded coconut gives a nice nutty taste to the salad. This is very colourful and a complete meal in itself. It is rich in protein, fibre, antioxidants and vitamin C. This is very good for weight loss as well. So, try to make it at home and be healthy.

Tips and Suggestions by Mom Chef:-
- Prepare the dressing of the salad in a jar or a separate bowl so that you can add the dressing as required and it will be easier to adjust the seasonings.
- You can use any leafy vegetable which is available.
- If the oranges are sour in taste then you can add little sugar to adjust the taste. Add sugar in the dressing.
- If you do not have cherry tomatoes then use chopped tomato.
