Custard Thandai | Instant Thandai Custard is a delicious festive dessert.

Custard Thandai | Instant Thandai Custard is a delicious melting-in-mouth dessert. You can make it with homemade thandai powder. It requires almonds, pistachios, cashew nuts, melon seeds, fennel seeds, poppy seeds, etc. Weikfield Custard Powder is used in this recipe which gives it a rich and creamy texture. This is a purpose-based drink and served especially for the Holi festival. It gives you the required energy and nutrients for the festival celebrations. The saffron strands impart a beautiful color. Ingredients

  • FOR THANDAI POWDER
  • Badam/Almonds - 1 cup
  • Pista/Pistachio - 1/2 cup
  • Kaju/Cashew nuts - 1/2 cup
  • Melon seeds - 1/4 cup
  • Khus khus/Poppy seeds - 1 tbsp
  • Saunf/Fennel seeds - 1 tbsp
  • Elaichi/Cardamom - 7 to 8
  • Kali Mirch/Black pepper corns - 1 tbsp
  • FOR INSTANT CUSTARD THANDAI
  • Doodh/ Milk - 2 cup + 2 to 3 tbsp
  • Weikfield Vanilla Custard Powder - 2 tbsp
  • Sugar - 2 tbsp or as per taste
  • Kesar/Saffron strands - 9 to 10
  • Homemade thandai powder - 3 tbsp
  • Edible rose water - 1 tbsp
  • Pista and rose petals - for garnishing

Instructions

  1. FOR THANDAI POWDER
  2. Take almonds, pista, kaju, melon seeds, poppy seeds, fennal seeds, black pepper corns and cardamoms in a mixture jar. Dry grind them well. Keep the mixture aside.
  3. FOR INSTANT CUSTARD THANDAI
  4. Take 2 to 3 tbsp of milk and weikfield vanilla custard powder in a bowl. Mix them well and make a lump free mixture. Keep it aside.
  5. Now, heat a kadai, pour 2 cup of milk in it. Mix well. Add saffron strands. Mix well.
  6. Then, add prepared homemade thandai powder in it. Mix it and boil it low to medium flame.
  7. Add edible rose water in it. Now, add prepared custard powder mixture slowly in it. Stir continuously while adding custard powder mixture. Boil it on high flame.
  8. Turn off the flame while it gets thick. Keep it aside and let it cool. Then, keep it in refrigerator for an hour. Take it out after cooling it and pour in serving glasses. Garnishing it with pista and rose petals
  9. 'Instant Custard Thandai' is ready to serve.
