Delicious Bhindi Fry : Andhra Style Curry

After sharing so many varieties in Bhindi (bhindi aloo, bhindi do pyaza with and without curd, dahi vali bhindi and bharwan bhindi), today I am sharing a South Indian special recipe –  “Andhra style Bhindi fry”. Bhindi/Lady’s finger is a simple and evergreen vegetable. This curry can be served best with chapatis and dal rice.

  1. Onion Parathas
  2. Tandoori Roti
  3. Aloo Methi Paratha

Ingredients

  • Bhindi/ Lady's finger - 250 grams
  • Urad dal/ black split gram - 1 tablespoon
  • Oil - 3 tablespoon
  • Onions chopped - 1 big sized
  • Mustard and cumin seeds - 1 tablespoon each
  • Spices - Turmeric powder, Red chili powder and Coriander powder - 1/2 tablespoon each
  • Kashmiri red chilies - 1-2
  • Chopped green chilies - 2
  • Chopped coriander leaves for garnish
  • Salt to taste
  • Lemon juice - 2 tablespoon

Instructions

  1. Rinse the bhindi in water and wipe them with the help of a kitchen towel. You may leave the washed bhindi on a plate for drying for sometime. Chop bhindi into 1-2 inch pieces, while removing its base and stalk.
  2. Heat oil in a pan on medium flame and add mustard and cumin seeds to it. Add urad dal. Saute the mix till seeds crackle and urad dal turns golden brown in colour.
  3. Add kashmiri red chilies, green chilies and onions to the pan. Saute them for few seconds and then add bhindi to it.
  4. Do not cover the lid of the pan, saute the mix for 5 minutes and let the bhindi be half cooked.
  5. Add the spices now . Mix well and cook it uncovered for 15 more minutes.
  6. Add salt in the end and mix well. Check the curry if bhindis are well cooked.
  7. Switch off the flame now and pour fresh lemon juice and chopped coriander leaves on curry.
  8. Yummy and quick "Andhra style bhindi fry curry" is ready to be served with hot rotis.
