Eggless Vanilla Cake

Ingredients

Maida /All purpose flour - 2 cups
Clarified butter / ghee - 1/2 cup
Powdered sugar - 1/2 cup
Baking powder - 1/2 Teaspoon
Baking soda - 3/4 Teaspoon
Chopped dry nuts - 2 Tablespoons
Vanilla Essence - 1 Teaspoon
Condensed milk (sweetened) - 1 cup
Milk - 1 cup

Instructions

Sieve all purpose flour, baking powder and baking soda in a bowl with the help of a strainer. Mix it well.
Meanwhile, melt the clarified butter on a slow flame in a pan and add powdered sugar to it. Turn off the gas after a minute.
Add the above mixture of butter and sugar to the all purpose mix and beat properly.
Slowly add milk and condensed milk and mix it well so as to make it lumps free.
Beat the mixture in one direction with hand whisk or use your hands.
Add chopped dry nuts and vanilla essence now. Mix them well.
Now apply little clarified butter to the cake pan and sprinkle some all purpose flour all around the sides of the pan.
Pour the cake batter in the pan now.
Meanwhile, preheat the microwave in 180 degrees for 10 minutes.
Place the cake pan in the microwave and bake it for around 30 minutes, check in between with the help of a tooth pick.
Bake for some more time and again check it by placing a tooth pick at the middle of the cake. The toothpick shall come out clean , which indicates that the cake is cooked well .
Remove the cake out of the microwave and allow it to cool down at room temperature.
Eggless Vanilla Cake is ready , cut into pieces and serve with tea /coffee.
