Souvlaki with Tzatziki Sauce

Ingredients

  • Red capsicum - 1/2 piece
  • Green Capsicum - 1/2 piece
  • Zucchini quartered lengthy into 1/2 inch slices - 1/2 piece
  • Paneer cubed - 200 gms
  • Fresh Lemon Juice - 3 tablespoon
  • Dried Oregano - 1.5 teaspoon
  • Olive Oil - 2 tablespoon
  • Minced Garlic Cloves - 4 pieces
  • Salt
  • Black Pepper - 2 tablespoon
  • Soak 2 wooden skewers in water for 10 minutes to prevent it from burning.
  • Tzatziki Sauce:
  • Plain Low fat yogurt - 1/2 cup ( Hang for 30 minutes to drain out water)
  • Cucumber Peeled and Shredded - 1/2 cup
  • Lemon Juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Minced Garlic - 1 piece
  • Black Pepper - 1/2 teaspoon
  • Brown Bread - 4 slices

Instructions

  1. In a bowl add lemon juice, dried oregano, olive oil, minced garlic.
  2. Whisk it. Dice red capsicum & green capsicum.
  3. Cut cubes of paneer.
  4. Take a bowl add capsicum and zucchini.
  5. Add 1 tablespoon of mixture of olive oil, lemon juice, garlic and oregano. Mix it well. Leave it for 30 minutes.
  6. Thread capsicum, zucchini, paneer in the skewers (8- inch) skewers.
  7. Heat a grill pan coat it with 1 teaspoon of olive oil.
  8. Add skewers cook for 8 minutes or until done, turning once.
  9. To prepare Tzatziki sauce, squeeze shredded cucumber.
  10. Combine cucumber, yogurt, 1 tablespoon lemon juice, ¼ teaspoon salt, black pepper and 1 garlic clove. Stir well.
  11. Grill brown bread.
  12. Serve Tzatziki sauce with Souvlaki & Grilled Bread.
