Gujiya Recipe | Karanji

Gujiya or Karanji is a traditional sweet dish famous across India, especially made during festival time like Holi or Diwali.

Gujiya recipe is an all-time favourite of everyone and is known by different names such as gujiya, kelkeli or karanji. Try this easy and yummy recipe made with homemade mawa and enjoy.

Ingredients

  • All purpose Flour/Maida - 250 Gram
  • Ghee /Clarified Butter for Moin- 4 Tablespoon
  • Mawa/Khoya/milk solids – 200 Gram
  • Dry nuts ( almonds, pista, coconut powder and raisins) – Mix all these to make 1/2 Cup
  • Elaichi/green cardamom powder – 4 to 5
  • Fine Sugar – 100 Gram
  • Saffron – 8 to 10 strands
  • Oil for deep frying
  • Maida water - Mix one tablespoon of maida and two tablespoon of water

Instructions

  1. Mix maida and ghee together. Knead dough using light warm water. Keep it aside for 10 minutes by covering with muslin cloth.
  2. Take a pan and heat it. Grate the mava or khoya and put in the pan. Heat the mava till it is soft.
  3. Crush the 1/2 bowl of dry nuts in a grinder. Now mix this along with coconut powder, elaichi powder, sugar and saffron in the mava thoroughly.
  4. Now make circular balls of the dough and roll into the size of a poori (puri). Now put the maida water mix on the corners.
  5. Now put the mava mixture prepared above in the center and place it in a gujiya mould. Press it tightly and take out the extra part coming out of the mold.
  6. For people who does not have mould, you can do this using your hands and pressing the corners with a fork.
  7. Now take enough oil in deep pan for deep frying. Heat the oil on a medium flame. Now fry these gujiyas on a low heat. Fry this gujiya till the colour changes to golden brown from both sides. Once done put on the kitchen towel to soak excess oil.
  8. The delicious 'Gujiya' is ready to be served hot or cold. Happy Holi in advance to everyone.
