Homemade Vegetable Pizza

Ingredients

FOR DOUGH AND PIZZA BASE -
All purpose flour/maida - 6 cups
Sugar - 1/2 teaspoon
Water - 250 ml
Yeast - 10 gms (small packet)
Olive oil - 2-3 tablespoons
Salt - 1 teaspoon
FOR PIZZA SAUCE -
Olive oil - 3 tablespoons
Butter - 3 tablespoons
Chopped garlic - 3
Chopped capsicum - 1/2
Crushed peppers - 2-3 teaspoons
Tomato puree - 2 cups
Oregano - 1 teaspoon
FOR TOPPINGS -
Chopped onions long and thin slices - 1/2 bowl
Chopped capsicums long and thin slices - 1/2 bowl
Chopped paneer cubes - 1/2 bowl
Grated cheese - 1/2 bowl
Chopped green chilies long and thin slices - 2
Jalapeno - 1/2 tablespoon (optional)

Instructions

Add 1 cup of all purpose flour, salt, sugar, yeast, warm water and mix well. Keep this mixture aside for 10 minutes.
FOR DOUGH - Add 5 cups of flour, olive oil, above yeast mixture and mix properly. Make a normal dough for pizza and tap it with some more olive oil. Cover the dough and rest it for next 1 hour. After an hour, knead the dough for 2-3 minutes and then again rest it for the next 30 minutes.
FOR PIZZA SAUCE - Heat olive oil and butter in a pan on a medium flame and add chopped garlic to it. Saute for a while and add chopped capsicums. After few seconds, add crushed pepper and tomato puree. Mix well, cook for 20 minutes and add oregano to it. Turn off the gas and allow it to cool down. Pizza sauce is ready.
FOR PIZZA BASE - Dust some dry flour on the rolling surface. Roll a portion of the above dough into a big roll with the help of a roller pin. Pizza base is ready.
Spread the above pizza sauce over the pizza base and add all chopped veggies for toppings. Add grated cheese over it and brush some olive oil on it, especially at the corners of the base. Meanwhile, preheat the oven to 250 degree C.
Bake the pizza for 25-30 minutes till the veggies gets soft and pizza base gets crispy. Cool down once is done and cut into pieces.
NOTE - For tomato puree, boil 3-4 tomatoes on a medium flame while adding a pinch of salt and sugar to it. Peel the skin of the boiled tomatoes and grind them in a grinder.
Delicious homemade vegetable pizza is ready to be served.
